Week 4/5 - Here we are again -
Saturday morning. Time to “’process” the box of veggies I just picked up
at Green City and freak out about how my fridge is yet again too full.
Basically, it is time for me to grab an armful of what I have left over from last week, sautee it up with some of the new stuff I have on hand and add eggs. YUM!
This scramble was actually delicious. I sauteed up onions, broccoli, summer squash and garlic scapes (NEW INGREDIENT ALERT). I added a small bit of cheese. On the side, I included sauteed radishes with garlic scapes, onions, and fennel (another new one).
Everything turned out delightfully. I also ate the last of the strawberries of the season. Even after eating my body weight in strawberries over the season, I will be sad to see them go!
Add a sliced up tomato, and you have an amazing and healthy breakfast!
